How to Make Chocolate + Pistachio Butter Cups:

  1. In a food processor, grind the pistachios into a smooth paste, about 10 minutes. The mixture will become warm as it blends.
  2. Add the honey, salt, and oil, then process again until smooth and creamy, about 5 to 10 more minutes. Pause if needed to let the mixture cool and scrape down the sides.
  3. Measure out 1/2 cup of the pistachio butter into a bowl and reserve the rest for another use. Stir in the chopped pistachios, then chill in the refrigerator or freezer until firm enough to hold its shape, about 1 to 2 hours.
  4. Place the chocolate and coconut oil in a heat-safe bowl over gently steaming water. Stir occasionally until fully melted and smooth, then remove from heat and let cool slightly.
  5. Drizzle a thin layer of chocolate into the bottom of each cup and tilt to coat. Freeze for about 5 minutes until firm.
  6. Add another thin layer of chocolate, then place a small scoop of pistachio butter in the center. The chocolate should rise around the sides.
  7. Top with more chocolate to seal, then sprinkle with chopped pistachios, cacao nibs, and flaky salt.
  8. Repeat with remaining cups, then freeze until fully set. Store in the refrigerator to keep the chocolate firm.
