  • 3/4 cup goat cheese
  • 2 avocados, diced
  • Pinch of salt

Strawberry-Lime Dressing

  • 2/3 cup roughly chopped strawberries (89g)
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons honey (or agave)
  • 2 tablespoons fresh lime juice
  • 1 teaspoon lime zest (about 1 large lime)
  • 1/2 teaspoon salt
  • 1/3 cup olive oil

How to Make Strawberry Chicken Salad:

  1. Place the strawberries, apple cider vinegar, honey, lime juice, lime zest, and salt in a small food processor. Process until the strawberries are fully broken down, stopping to scrape the sides as needed.
  2. With the food processor running, slowly stream in the olive oil until the dressing becomes smooth and slightly thickened.
  3. Toast the pecans in a 400°F oven for 5–7 minutes, until golden and fragrant. Keep a close eye to prevent burning.
  4. Divide the baby spinach evenly among 6 bowls. Top with sliced strawberries, cooked chicken, red onion, goat cheese, and diced avocado.
  5. Sprinkle each salad with a pinch of salt.
  6. Drizzle about 2½ tablespoons of dressing over each salad and serve immediately.
