Ingredients:

  • 2 oz. water
  • 1 oz. honey
  • 1 sprig fresh rosemary
  • 1 tsp. granulated sugar
  • 2 oz. alcohol-free gin
  • 1 oz. fresh lemon juice
  • Ice
  • Club soda, for topping off
  • Lemon peel, for garnish

Recipe:

Make the honey syrup:

  • In a small heatproof bowl or cup, microwave the water and honey until the honey is fully dissolved and smooth, about 30 seconds. Stir and let cool.
  • Alternatively, heat gently in a small pot over medium-low heat, stirring until dissolved and cooled before using.

Prepare the sugared rosemary:

  • Spoon 1 oz. of the honey syrup into a shallow dish.
  • Dip the rosemary sprig into the syrup, shaking off excess.
  • Place sugar in another shallow dish and toss the rosemary to coat evenly.
  • Transfer to a plate and let sit at room temperature to set, about 45 minutes, or refrigerate up to 1 day.

Make the mocktail:

  • In a cocktail shaker, combine alcohol-free gin, fresh lemon juice, 1 oz. honey syrup, and 2–3 ice cubes.
  • Cover and shake vigorously until the outside of the shaker is frosty, about 20 seconds.
  • Strain into a chilled stem glass. Top with club soda for a refreshing fizz.
  • Garnish with a lemon peel and the sugared rosemary sprig. Serve immediately and enjoy.
