Ingredients:

  • 1 14-ounce can full-fat coconut milk (do not use low-fat)
  • 1/2 cup plus 3 tablespoons honey, divided (or agave for vegan version)
  • 1/3 cup coconut oil, at room temperature (should be the consistency of softened butter)
  • 66 grams coconut flour, sifted
  • Pinch of salt
  • 2/3 cup almonds (87 grams)
  • 3/4 cup dark chocolate chips (dairy-free for vegan option)
  • 1/2 cup unsweetened coconut flakes

How to Make Paleo Magic Cookie Bars:

  1. In a large pot over high heat, whisk together the coconut milk and 1/2 cup of honey (or agave), reserving the remaining honey for later. Bring to a boil and cook for 1 minute, stirring constantly.
  2. Reduce heat to medium and simmer for about 20 minutes, stirring frequently, until the mixture reduces by about half.
  3. Transfer the sauce to a large measuring cup and let it cool while you prepare the crust. You should have about 1 1/4 cups remaining.
  4. Preheat oven to 350°F and line an 8×8-inch pan with parchment paper. Lightly grease the sides with coconut oil spray.
  5. In a large bowl, use a hand mixer to beat the remaining 3 tablespoons of honey with the coconut oil until smooth and creamy. Stir in the coconut flour and salt until a wet dough forms.
  6. Press the dough evenly into the bottom of the pan. This may take some patience, using your hands works best.
  7. Bake the crust for about 7 minutes, until lightly golden.
  8. While the crust bakes, chop the almonds.
  9. Remove the crust from the oven and sprinkle the almonds evenly over the top, pressing them in gently. Add the chocolate chips and coconut flakes.
  10. Pour 1 cup of the slightly cooled coconut milk mixture evenly over the top, allowing it to seep into the layers.
  11. Bake for 27–28 minutes, until the edges are lightly golden brown.
  12. Cool to room temperature, then cover and refrigerate overnight (this step is essential for setting).
  13. Once chilled, slice into bars and enjoy.

Why This Supports Women’s Hormone & Wellness Health:

These bars are more than just a healthier dessert. They are designed to support stable energy and hormonal balance. Coconut milk and coconut oil provide nourishing fats that help regulate blood sugar and support adrenal and thyroid function. Coconut flour and unsweetened coconut add fiber, which slows glucose absorption and supports gut health, an essential component of hormone regulation. Almonds contribute magnesium and healthy fats that can help ease stress response and support progesterone balance. Using honey or agave in moderate amounts offers a more natural source of sweetness, especially when paired with fats and fiber to reduce spikes. Dark chocolate adds antioxidants that support mood and reduce inflammation. Altogether, this recipe helps satisfy cravings while keeping your hormones, energy, and metabolism more steady and supported.

Storage Tips:

  • Store bars in an airtight container in the refrigerator for up to 5 days.
  • Keep chilled for best texture and structure.
  • These bars can also be frozen for up to 1 month, thaw in the fridge before serving.
