Chocolate Chip Blender Muffins

Ingredients:

  • 1/2 cup nut butter (peanut, almond, or cashew; rich in healthy fats to support hormonal balance)
  • 1 egg (a complete protein to aid muscle repair and energy levels)
  • 5 tablespoons cocoa powder (loaded with antioxidants to support heart and brain health)
  • 6 tablespoons honey or monk fruit syrup (natural sweeteners for a balanced blood sugar response)
  • 1 teaspoon vanilla extract (a natural flavor enhancer with anti-inflammatory properties)
  • 1/2 teaspoon cinnamon (supports blood sugar regulation and metabolism)
  • 1/2 teaspoon baking soda (helps create a light, fluffy texture)

Instructions:

1️⃣ Blend it up: In a blender or food processor, combine all ingredients except the chocolate chips. Blend until smooth (30-45 seconds). 

2️⃣ Mix & Pour: Fold in the chocolate chips and pour the batter into 9 greased muffin cups

3️⃣ Add Extra Chocolate: Sprinkle a few extra chocolate chips on top (optional, but highly recommended!). 

4️⃣ Bake: Pop them in a 375°F oven for 15-18 minutes. Let cool slightly before enjoying!
