Ingredients for this Cookie Recipe:

  • 1 cup almond flour
  • 2 tablespoons cacao powder
  • 2 tablespoons pure maple syrup
  • 3 tablespoons coconut oil, melted and cooled
  • ½ teaspoon peppermint extract

For the Chocolate Coating:

  • 1 cup dark chocolate chips (we used sugar- and dairy-free)
  • ¼ teaspoon peppermint extract

How to Make Peppermint Cacao Cookies:

  1. In a bowl, mix together almond flour, cacao powder, maple syrup, coconut oil, and peppermint extract until a dough forms.
  2. Refrigerate the dough for 10 – 15 minutes to firm up.
  3. Preheat oven to 350°F and line a baking sheet with parchment paper.
  4. Form cookies by hand and place them on the baking sheet (note: they won’t spread or rise as they don’t have any baking powder/soda).
  5. Bake for 12–14 minutes, then remove and let cool completely.
  6. In a separate bowl, melt the chocolate chips and peppermint extract in the microwave in 30-second increments, stirring in between until smooth.
  7. Dip each cookie into the melted chocolate, place back on the baking sheet, and refrigerate until set.
  8. Enjoy chilled or room temp—your hormones will thank you!
